UltimateMama gave her kids a protein packed breakfast to go this morning. This quick and easy breakfast sandwich was made in 5 minutes and given a 5 star rating by the girls.  Ultimate Breakfast Sandwich recipe (for one):

– 1 Portuguese roll

– 1 egg (add a tablespoon of milk and scramble)

– Turkey bacon (from yesterday morning)

Just heat up the roll in a pan, place the scrambled egg on the bottom half of the roll, put a strip of turkey bacon on top of the egg, and cover with top of roll!

Enjoy!

UltimateMama’s two kids were craving doughnuts last weekend so they put the Sur La Table frosted rainbow sprinkle doughnut mix to the test.  Not only was it easy to follow (except a cupcake tray was used for “holeless” doughnuts) but also hit the spot on taste!

 

 

 

 

 

 

 

 

 

 

 

UltimateMama’s kids love her delicious (and easy to prepare) Italian bread with Nutella Crepes for breakfast. To do:

-Cut off the crusts of 4 slices of Italian bread and roll each slice a few times to stretch it out

-Spread some Nutella on each slice and add thin strawberries

-Roll up the bread

-Crack one egg and beat with a fork

-Dip the rolled up bread in the egg on all sides

-Cook it on a frying pan over low to medium heat

-Repeat with the other 3 slices of bread

-Remove from heat and sprinkle with cinnamon & sugar (or just brown sugar)

-Enjoy!

UltimateMama had her kids create a weekend brunch that was healthy and tasty. They opted for bagels and lox with many creative accompaniments.

-Set out your favorite bagels (kids love Tal Bagels in NYC) and slather on some cream cheese

-Place lox on a separate plate

-Dice some cucumbers and tomatoes and place in bowls next to a bowl of carrots to snack on as well

UltimateMama will admit that in the past her children were less than enthusiastic about eating a wide variety of fruit in the morning madness rush of breakfast.  After years of washing fruit and placing it into individual, colorful bowls on the breakfast table, UltimateMama realized that much of it was going to waste.  The children were only eating a strawberry here or a blueberry there.  Not exactly a healthy, well-balanced start to the day.

A thought occurred to her–the real trick to make eating fruit fun at any age is PRESENTATION!  UltimateMama realized that placing the already washed, cut, and prepared fruit into colorful, elegant glass trifle bowls created a fancy, holiday feel to the breakfast table.  UltimateMama’s children couldn’t stop smiling….and eating!

UltimateMama recently surprised her children with heart shaped omelets for breakfast with her new Norpro nonstick pancake/egg rings. The result you ask? Nothing short of utter amazement with lots of laughs from her kids. Worth it! Whether you are celebrating the start/end of the school year, birthdays, summer camp send off, academic/athletic achievements, holidays, or really anything, your child will love starting the day with egg (or pancake) hearts for breakfast!

 

UltimateMama left breakfast plating up to her girls this morning and was thrilled with the results.  They used eggs, turkey bacon, pumpkin bread, waffles, blueberries, and clementines to create a beautiful little girl.  Nutritious and delightful!
