UltimateMama’s kids enjoy whipping up fresh tomato mozzarella bites in a flash.  These quick, easy to make appetizers are beautiful on any dining table.

What you need:

1 pound container of Campari tomatoes

Small container of pearl or cherry size fresh mozzarella balls

4 clean, washed basil leaves

Drizzle (1 tablespoon) extra virgin olive oil

To assemble:

Cut the tomatoes in half.

Use a melon baller to scoop out the inside of tomatoes and discard.

Place a mozzarella ball inside of each tomato “shell”.

Drizzle with olive oil.

Garnish with basil (or you can thinly slice the basil leaves and place in each one).

Enjoy!

UltimateMama and her kids love making and serving these super easy prosciutto and salami wrapped mozzarella sticks.  Guests can pick them up with no mess, plus they can be made in advance of your gathering.

To make:

8 ounces of whole milk Mozzarella cheese (chunk or “brick” loaf style so it can be easily cut)

4 ounces of sliced prosciutto

4 ounces of sliced salami

Prepare mozzarella cheese by cutting into 4 inch long, 1/2 inch thick pieces

Roll either the prosciutto or salami around the cheese

Repeat until all ingredients are done

Serve and enjoy! (adding pitted olives and stuffed grape leaves is a nice bonus for friends)

UltimateMama and her kids are passionate about food insecurity issues in the community.  A productive way to get kids involved in helping those in need is to contact your local food pantry, soup kitchen, community center, or religious organization and ask them how they can use your assistance.  This morning, UltimateMama and her crew of two made 22 peanut butter and jelly sandwiches on whole wheat bread (wearing gloves during assembly) and put them into individual bags which were dropped off by 9 AM at the New York Common Pantry.  Help reduce hunger in your neighborhood today!

UltimateMama discovered a new kitchen must-have that makes creating mini pancakes or pancake “cereal” incredibly easy.  The pancaker is sold by the Container Store and offers an all in one measure, mixing, and shaking product complete with a spout for an easy to pour experience. Just use your favorite mix and you can whip up creative mini pancakes in minutes! Add chocolate chips if you feel decadent.

UltimateMama loves to use Wilton 3 tier treat stands as table centerpieces during the holiday season.  These sturdy dessert stands make beautiful presentations of your favorite creations from cupcakes to cookies to brownies.  UltimateMama’s kids enjoy dressing up the stands with mini pumpkins in the fall for a sweet, seasonal surprise.

UltimateMama and her kids love to make simple tissue paper floral centerpieces.  Easy, inexpensive, and pretty these paper flower centerpieces are the perfect addition to your dinner table or any party tablescape.  To do:

-Stack 3 sheets of tissue paper on top of each other

-Cut into 12 by 6 inch pieces

-Start with the shorter side and fold into 1 inch accordion folds

-Turn the tissue paper stack over for the next fold, then turn it over for the fold after that

-Take scissors and trim the edges with rounded corners

-Place a green pipe cleaner in the middle of the folded tissue paper strip and twist the pipe cleaner to hold the tissue paper in place

-Carefully peel the tissue paper layers apart

-The “petals” will unfold and you will see it “blossom”

UltimateMama gave her kids a protein packed breakfast to go this morning. This quick and easy breakfast sandwich was made in 5 minutes and given a 5 star rating by the girls.  Ultimate Breakfast Sandwich recipe (for one):

– 1 Portuguese roll

– 1 egg (add a tablespoon of milk and scramble)

– Turkey bacon (from yesterday morning)

Just heat up the roll in a pan, place the scrambled egg on the bottom half of the roll, put a strip of turkey bacon on top of the egg, and cover with top of roll!

UltimateMama’s two kids were craving doughnuts last weekend so they put the Sur La Table frosted rainbow sprinkle doughnut mix to the test.  Not only was it easy to follow (except a cupcake tray was used for “holeless” doughnuts) but also hit the spot on taste!

 

 

 

 

 

 

 

 

 

 

 

UltimateMama often surprises her kids with easy to make, not to mention handle ice cream cone cupcakes.  They are a perfect treat for parties or summertime BBQs.  Adding sprinkles to the mix is fun for all.  To make:

-Place 24 cones in metal cupcake baking trays

-Make the cake batter as directed and fill each cone halfway

-Bake according to directions

-Cool and frost!

UltimateMama’s kids love Acai bowls for breakfast. They are thick, rich, and packed with nutrients.  To make:

-Take a frozen packet of Sambazon Acai berry original blend and run it under water

-Cut off the top and put it into a blender (it will be slightly frozen)

-Add 1/4 cup of orange juice or almond milk (or more to your liking)

-Add some slices of blueberries, banana, raspberries, blackberries, or strawberries

-Blend

-On the stovetop saute 1/4 cup oats with 1 teaspoon of brown sugar

-In your bowl, pour oats over the Acai mixture

-Enjoy!
